Seeds are the initial source of the nutrition for the new plant. The three main seeds listed are pumpkin, sesame, and sunflower. They are high-protein foods, with more protein than the grains.

Pumpkin Benefits
Pumpkin seeds, are packed with protein, fibre, iron, copper, magnesium, manganese, and phosphorous, as well as the amino acids arginine and glutamic acid. They also contain some calcium, potassium, zinc, selenium, folate, and niacin. Pumpkin seeds also contain linolenic acid, which may help to prevent hardening of the arteries.
Sesame Benefits
Sesame seeds, are a key source of phytic acid, magnesium and calcium. Phytic acid could inhibit cancer, specifically of the colon. They help to protect the body from free radicals.
Sunflower Benefits
Sunflower seeds are an outstanding source of antioxidant vitamin E, and also supply good amounts of folate (folic acid) and other B vitamins, and minerals including copper, magnesium, and selenium.
